Kmao started as an idea in a dim sum restaurant in LA’s Chinatown. The goal: make a chili oil that was both flavorful and spicy. The Yeak peeps brainstormed what flavor profiles a chili oil needed to have and what ingredients would give it those characteristics. Toasted chili peppers give off notes of smoke. Roasted garlic gives it sweetness and earth. Fish sauce = a savory and umami profile.
