The Perfect Pair: Hot Chicken Sandwich and Secret Aardvark Habanero

As legend has it, a womanizing Thornton Prince returns home to his forlorn wife, who has prepared for him a fried chicken sandwich. She fixes the sandwich with next-level spice as punishment for his infidelities. A colorful story, but we don’t buy that anyone would ever consider this Nashville classic a punishment. Nonetheless, the Hot Chicken Sandwich was born.
A traditional recipe calls for using an unnamed hot sauce, likely one from the South like Tabasco or Crystals hot sauce. We topped ours with Portland favorite Secret Aardvark Habanero, because why be a purest?
Luckily, the tangy bite of the cayenne from the hot battered fried chicken blends perfectly with the sweeter warmth of the Secret Aardvark Habanero. As for the heat, well, they don’t call it hot chicken for nuthin’! For a sandwich that is already infused with cayenne, we went a little extra with the Secret Aardvark. Just like ol' Thorton—we’re a glutton for punishment.
